Abstract
Aflatoksini su mutageni, karcinogeni i teratogeni spojevi i njihova prisutnost u organizmu tijekom duţeg vremenskog razdoblja i u ekstremno malim količinama, može biti opasna za ljudsko zdravlje. Toksični metaboliti aflatoksina mogu se naći i u proizvodima životinjskog podrijetla, mlijeku i mesu, ukoliko je prethodno hrana za životinje bila onečišćena plijesnima, a onečišćenje ovisi o geografskom području, klimatskim uvjetima, vlazi i temperaturi (Sassahara i sur., 2005.). Mnogi mikroorganizmi, uključujući bakterije, kvasce, plijesni, aktinomicete i alge mogu ukloniti ili smanjiti količine aflatoksina u hrani i krmi. Biološke metode redukcije mikotoksina temelje se na uporabi različitih mikroorganizama, uključujući bakterije, kvasce i plijesni, koji mogu metabolizirati i inaktivirati aflatoksin, pri čemu je najdjelotvorniji Flavobacterium aurantiacum. Biosintezu aflatoksina inhibiraju i bakterije mliječne kiseline Bacillus subtilis
Abstract (english)
Aflatoxins are mutagenic, carcinogenic and teratogenic compounds and their presence in the body over a long period of time and in extremely small quantities may be hazardous to human health. Tobacco metabolites of aflatoxins can also be found in products of animal origin, milk and meat, if previous feedstuffs were contaminated with molds, and contamination depends on the geographic area, climatic conditions, humidity and temperature (Sassahara et al., 2005). Many microorganisms, including bacteria, yeasts, molds, actinomycetes and algae, can remove or reduce aflatoxins in food and stomach. The mycotoxin reduction methods are based on the use of various microorganisms, including bacteria, yeasts and molds, that can metabolize and inactivate aflatoxin, whereby the most effective Flavobacterium aurantiacum is. The aflatoxin biosynthesis also inhibits Bacillus subtilis lactic Acid bacteria.
