Abstract
Kemijskom analizom mošta iz bobica autohtone sorte Pošip (V. vinifera L.) pokušali smo dokazati u kojoj mjeri nadmorska visina utječe na dinamiku nakupljanja šećera, kiselina i polifenola, a samim time i na postizanje tehnološke zrelosti. Istraživanje je obavljeno na Bračkom vinogorju, u periodu od 13.06. do 22.08.2017. Provedeno je ukupno 6 uzorkovanja po vinogradu u razmacima od 14 dana. Po svakom tretmanu, sakupljeno je 100 bobica na principu „isti trs, isti pup, ista strana“. Trsovi su izabrani slučajnim odabirom čime je postignuta reprezentativnost uzorka. Prema odnosu šećera i ukupnih kiselina, tehnološka zrelost na lokalitetu Smrčeva Luka (100 m nadmorske visine) je nastupila 08.08.2017. dok je tehnološka zrelost na lokalitetu Grabice (430 m nadmorske visine) prema istim parametrima utvrđena 22.08.2017. Kemijskom analizom mošta iz prikupljenih uzoraka, utvrđena je različita dinamika nakupljanja šećera, kiselina i polifenola s obzirom na različite nadmorske visine. Kao posljedica tih različitosti u kemijskom sastavu grožđa, tehnološka zrelost je nastupila u različitim terminima.
Abstract (english)
By chemical analysis of must from berries of autochthonous variety Pošip (V. vinifera L.) we tried to prove to what extent altitude affects the dynamics of accumulation of sugar, acids and polyphenol, and therefore on achieving technological maturity. The research has been carried out on Brač vineyards, in the period between June 13 and August 22, 2017. Six samplings were conducted in vineyard in intervals of 14 days. In each treatment , 100 berries were gathered by the principle "same vine, same shoot, same side". Vines were selected randomly and because of it the representative sample was achieved. According to ratio of sugar and total acidity, technological maturity on the site Smrčeva luka (altitude 100 m) was reached August 8, 2017, while technological maturity on the site Grabice (altitude 430m), with the same parameters, was determined August 22, 2017. By chemical analysis of must of collected samples, the different dynamics of accumulation of sugar, acids and polyphenols was determined due to different altitudes. As a result of these differences in chemical composition of grapes, technological maturity occured in different times.
