Abstract
Peradarstvo je oduvijek bilo i još uvijek je veliki dio proizvodnje i uzgoja životinja za naše prehrambene potrebe. S poboljšanjem u perzervacijskim tehnikama za svježu perad i proizvedene proizvode, konzumerske preferancije za perad i proizvode peradi su vjerovatno više nego ikad. U ovom radu proći ćemo teme poput klasifikacije, biologiju, proizvodnju, transport, klanje, rukovanje prije i poslije klanja, procjenu i rezanje mesa nakon klanja. Osim toga, osvrnut ćemo se na inženjerske principe pakiranja, atribute kvalitete, sigurnosnih mjera i sanitacije. Pored mesa i njegovih derivata, kao glavnih proizvoda peradarske industrije, obraditi ćemo i jaja, njihov utjecaj na zdravlje, njihov nutritivni sastav te znanost i tehnologiju usko vezanu uz njihovu proizvodnju. Nakon opisa proizvodnje i svega vezanog uz to, fokus ćemo prebaciti na ekonomsko gledište cijele industrije, trendovima proizvodnje i razvoja u Republici Hrvatskoj. Pažljivom analizom dostupnih informacija o proizvodnji, uvozu, izvozu i distribuciji peradi i peradarskih proizvoda u posljednjih 10 godina dat ćemo pregled s ekonomskog stajališa te izložiti potencijalne prijedloge za unapređenje peradarske industrije Republike Hrvatske.
Abstract (english)
Poultry farming has always been and it still is a large part of the production and breeding of animals for our food purposes. With improvements in preservation techniques for fresh produce and manufactured products, consumer preferences for the product and products are trusted more than ever. In this paper we will have classifications, biology, production, transport, slaughter, handling before and after slaughter, prescribing and cutting meat after slaughter. In addition, we will look at the engineering principles of packaging, assign quality, safety measures and sanitary measures. In addition to meat and its products, as the largest production of the poultry industry, we will also process eggs, their impact on health, their nutritional ingredients and we will know and use technology for better production. After the description of production and everything related to it, we will focus on the economic point of view of the entire industry, production and development trends in the Republic of Croatia. By carefully analyzing the available information on the production, import, export and distribution of poultry and poultry products in the last 10 years, we will provide an overview from an economic point of view and present potential proposals for improving the poultry industry of the Republic of Croatia.
