Abstract
U radu su opisani fizikalni i kemijski procesi nastajanja i oslobađanja slobodnih radikala. Glavni i sporedni uzroci oksidativnog stresa i njegove štetne posljedice na organizam. Objašnjeni su principi određivanja koncentracije flavonoida, fenolnih kiselina i ukupne polifenole u uzorcima meda sa područja Republike Hrvatske visokotlačnom tekućinskom kromatografijom (HPLC). U ovom radu prikazani su dosadašnji rezultati u generiranju slobodnih radikala.
Abstract (english)
In this article, physical and chemical processes of formation and dismission of free radicals, so as main and collateral causes of oxidative stress and its harmful effects to organism are described. Principles of determination quantity of flavonoids, fenol acids and total polyphenola in samples of honey in Croatia using high performance liquid chromatography (HPLC) are explained. It is presented review of former results of generation free radicals.
