Abstract
Duboka, vlažna ilovasta tla s dobrim drenažnim sustavom i umjerenom klimom najpovoljnija su za uzgoj jednogodišnjeg i višegodišnjeg hrena, a zemlje koje su najveći uzgajivači hrena su Sjedinjene Američke Države i Mađarska. Hren se zbog svojega specifičnoga okusa koristi u prehrani kao začin te ima višestruko zdravstveno djelovanje zbog velike količine vitamina C te zbog antibiotskih svojstava. Važna je sirovina za izdvajanje peroksidaze koja se koristi za reagense pri određivanju šećera i kolesterola u krvi. Hren je bogat glukozinolatima, sekundarnim produktima koji imaju važnu ulogu u obrambenom sustavu biljke. Uz glukozinolate, važno je istaknuti i izotiocijanat koji bi mogao postati važno antikancerogeno sredstvo jer, osim što sprječava razvoj novih, uništava postojeće kancerogene stanice. Uz antibakterijske, izotiocijanat posjeduje i antiprototozoalne i antifungalne aktivnosti. Upravo je zbog hranjivih vrijednosti, ljekovitih svojstava i specifičnog okusa i mirisa preporučljiva konzumacija hrena u različitim oblicima.
Abstract (english)
Deep, moist, loamy soils with good drainage systems and temperate climates are best suited for growing horseradish and the countries that are the largest horseradish producers are the United States of America and Hungary. Due to its specific taste, horseradish is used in the diet as a spice and has multiple health effects due to its high amount of vitamin C and its antibiotic properties. An important raw material obtained from horseradish is peroxidase which is used for tests in the determination of blood sugar and cholesterol. Horseradish is rich in glucosinolates, secondary products that play an important role in the plant's defense system. In addition to glucosinolates, it is also important to highlight isothiocyanate, which could become an important anticarcinogenic agent because, in addition to preventing the development of new ones, it destroys existing cancer cells. In addition to antibacterials, isothiocyanate also possess antiprotozoal and antifungal activities. Due to its nutritional value, medicinal properties, specific taste and aroma, it is advisable to consume horseradish in various forms.
