Abstract | Izdanci mlade pšenice koji se još nazivaju pšenična trava sve se češće koriste u ljudskoj prehrani u obliku soka ili praha.
Kao bogati izvor minerala i vitamina A,C, E i B koristi se za liječenju astme, različitih alergija, u regulaciji šećera i
visokog krvnog tlaka, a zbog sadržaja određenih aminokiselina i enzima pokazuje antikancerogeno djelovanje. U uvjetima
nedostatka hemoglobina u krvi, klorofil iz pšenične trave preuzima njegovu ulogu pa se pšenična trava uspješno koristi i
u liječenju anemije. Tijekom godina provedena su različita istraživanja na pšeničnoj travi koja bi poboljšala njezin rast i
razvoj te kvalitetu. Cilj ovog istraživanja je bio utvrditi utjecaj različitih temperatura (10, 20 i 30 oC) i primiranja sjemena
(H2O, NaHS, Na2SeO4, NaHS+Na2SeO4) na sadržaj fenola, flavonoida, fotosintetskih pigmenata i udio suhe tvari kod tri
sorte pšenice (Katarina, Osječka 20 i Super žitarka. Utvrđen je najveći sadržaj fenola i flavonoida pri 10 oC, suhe tvari pri
20 oC te fotosintetskih pigmenata pri 30 oC. Značajno veći sadržaj fenola i flavonoida u temperaturnom stresu je pokazalo
primiranje sjemena selenom dok je na povećanje sadržaja suhe tvari najviše utjecalo primiranje sumporom. Sorta Katarina
je pokazala značajno povećanje sadržaja fotosintetskih pigmenata pri temperaturnom stresu kod primiranja vodom i
kombinacijom sumpora i selena, dok su sorte Osječka 20 i Super Žitarka povećanjem sadržaja fotosintetskih pigmenata
reagirale samo pri temperaturi 20 oC. |
Abstract (english) | Young wheat shoots, also called wheatgrass, are increasingly used in the human diet in the form of juice or
powder. As a rich source of minerals and vitamins A, C, E and B, it is used to treat asthma, various allergies, in
the regulation of sugar and high blood pressure, and due to the content of certain amino acids and enzymes, it has
anticancer effects. In conditions of lack of hemoglobin in the blood, chlorophyll from wheatgrass takes over its
role, so wheatgrass is successfully used in the treatment of anemia. Over the years, various studies have been
conducted on wheatgrass that would improve its growth, development and quality. The aim of this study was to
determine the effect of different temperatures (10, 20 and 30 oC) and seed priming (H2O, NaHS, Na2SeO4, NaHS
+ Na2SeO4) on the content of phenols, flavonoids, photosynthetic pigments and dry matter content in three wheat
varieties (Katarina, Osječka 20 and Super Žitarka). The highest content of phenols and flavonoids was determined
at 10 oC, dry matter at 20 oC and photosynthetic pigments at 30 oC. Significantly higher content of phenols and
flavonoids in temperature stress was shown by selenium priming, while the increase in dry matter content was
mostly influenced by sulfur priming. Variety Katarina showed a significant increase in the content of
photosynthetic pigments under temperature stress when primed with water and a combination of sulfur and
selenium, while varieties Osječka 20 and Super Žitarka reacted to with an increase in the content of photosynthetic
pigments only at the temperature of 20 oC. |
