Abstract
Aflatoksine sintetizira ograniĉeni broj sojeva plijesni iz rodova Aspergillus, Penicillium i Fusarium. Predstavljaju smjesu kemijski srodnih spojeva meĊu kojima su najvaţniji predstavnici aflatoksini B1, B2, G1, G2, M1 i M2. Oznake B i G obiljeţavaju boju kojom, pri odreĊenoj valnoj duljini UV- svjetla, aflatoksini fluoresciraju (eng. B-Blue, plavo; G-Green, zeleno), a M prema supstratu (eng. milk, mlijeko) iz kojeg su izolirani. Izvori aflatoksina u hrani: ţitarice, kruh, grah, soja, riţa,... More kava, kakao, kikiriki, kokosov orah, pistacije, orasi, mlijeko, jaja, meso, suhomesnati proizvodi, suho voće (smokve, groţĊice i dr.), masline, maslinovo ulje, mlijeko, crna i bijela vina, orasi i dr. Abstract (english)
Aflatoxines synthesized limited number of mold from Aspergillus, Penicillium and Fusarium family. They represent compound of chemically related compounds, in which are the most important representatives aflatoxins B1, B2, G1, G2, M1 i M2.Sources of aflatoxins in food are wheat, bread, bean, coffe, rice, cocoa, peaunat, coconut, dried meat products, dried fruits (figs, raisins, etc. ), olives, olive oil, milk, red and white wines, etc.
