Abstract
Celer se iz Europe proširio u većinu zemalja gdje se uzgaja i koristi u svježoj potrošnji i preradi. Kod prehrane se koristi zadebljali korijen, peteljke i listovi, a postoje celer korjenaš (Apium graveolens var. rapaceum) i celer listaš (Apium graveolens var. secalinum). Najbolje uspijeva na dubokim i propusnim tlima neutralne reakcije. Dobro podnosi niske temperature, ali ima visoke zahtjeve za vlagom. Ljekovita svojstva celera već se dugo poznata u tradicionalnoj i alternativnoj medicini. Značajnu ulogu ima u prevenciji kardiovaskularnih bolesti i kod snižavanja krvnog tlaka. Bogat je vodom, vitaminima i mineralima, ima antibakterijska, protuupalna i protutumorska djelovanja. Dokazano je da povoljna djelovanja komponenata celera dovode čak do povlačenja raka dojke, gušterače i jetre. Prehrambena vlakna celera imaju značajnu ulogu kod brzine kretanja hrane kroz gastrointestinalni trak. U današnje se vrijeme sve više pažnje pridaje ljekovitim svojstvima kako bi se iskoristio potencijal ljekovitog bilja i smanjila upotreba lijekova koji nerijetko uzrokuju neželjene nuspojave gdje celer ima vrlo značajnu ulogu kao funkcionalno povrće.
Abstract (english)
Celery has spread from Europe to most countries where it is grown and used for fresh consumption and/or processing. For consumption, thickened root, petioles and leaves are being used. Two common specie of celery are used, celeriac (Apium graveolens var. rapaceum) and common celery (Apium graveolens var. secalinum). Celery grows best on deep and permeable soils with a neutral reaction. It withstands low temperatures but has high moisture requirements. The medicinal properties of celery have long been used in traditional and alternative medicine. It plays a significant role in the prevention of cardiovascular diseases and in lowering blood sugar. It is rich in water, vitamins and minerals andhas antibacterial, anti-inflammatory and antitumor effects. The beneficial effects of celery components have been shown to scavenge radicals and decrease the number of of breast, pancreatic and liver cancer cells. Celery dietary fibres play a significant role in the speed of food movement through the gastrointestinal tract. Nowadays, more and more attention is being paid to medicinal properties in order to exploit the potential of medicinal herbs and reduce the use of drugs that often carry negative side effects and celery has an important being concerned as functional vegetable.
