Abstract
Sve je veći broj znanstvenih tvrdnji koje podupiru tezu da određene prehrambene bioaktivne komponente imaju blagotvorne fiziološke i psihološke učinke na naš organizam. Posljednjih godina povećano je zanimanje potrošača kao i prehrambene industrije za funkcionalnu prehranu i njenu dobrobit u održavanju ljudskog zdravlja. Hrana za koju je dokazano da doprinosi ljudskom zdravlju naziva se funkcionalna hrana. Najvažniji funkcionalni sastojci jaja i mesa peradi su omega-3 masne kiseline, selen,... More vitamin E, lutein i karnozin. Stoga je cilj ovog specijalističkog rada dati kritički osvrt na ove funkcionalne sastojke u mesu i jajima peradi te dati uvid u najnovija postignuća u implementaciji istih. Sve navedeno omogućiti biti će koristan izvor informacija proizvođačima koji u svoju proizvodnju žele uključiti i proizvodnju funkcionalnih proizvoda od mesa i jaja peradi. Less
Abstract (english)
There is an increasing number of scientific evidences confirming the thesis that certain bioactive compounds have beneficial impact on human organism. In the last decades an increasing interest of consumers and food industry together with its benefit on human health can be observed. Food for which it is confirmed to be beneficial for human health is called functional food. Most important functional ingredients of poultry eggs and meat are omega-3-fatty acids, selenium, vitamin E, lutein... More and carnosine. Therefore, the aim of this thesis is to give a critical insight into these functional ingredients and the newest development in their implementation. This can serve as a good information source to producers who wish to implement into their production also the production of functional commodities made from poultry meat and eggs. Less
