Price volatility is the range and speed of price movement. By monitoring volatility, it is possible to measure business risk. Risk is the probability of loss or the probability of a negative effect. Livestock production plays an important role in European agriculture, especially the pig sector. The aim of this research was to show pig production and analyze factors that can affect the volatility of pork prices at the level of the Republic of Croatia and the European Union in the period from 2016 to 2020. The foreign trade balance in the trade in pork meat is expressed through a deficit, that is, in the area of import and export of pigs and pork products, it is clear that in Croatia, imports are greater than exports. Croatia's self-sufficiency in pork production in 2019 increased by 33% compared to 2016. The base index for the Republic of Croatia and the European Union is greater than 100, that is, a positive value of producer and purchase prices is recorded. Price management in pig production is of great importance due to the increase in profitability and competitiveness of the economy, and there is a big difference in covering variable costs with price fluctuations. Price management requires cost reduction, which is often accompanied by the deterioration of existing quality, in order to avoid this, knowledge, control and production resources are required. Managing the price is not simple because the price is an attempt to express the value of the product, which will be noticed and accepted on the supply and demand side. Volatility monitoring and price management is possible through improving the competitiveness and positioning of the company, cash reserves in periods of high profitability, credit or co-financing from EU funds, purchase of necessary raw materials in advance or protection through standardized sales contracts, where the quantities are agreed and harmonized with the corresponding prices.
