Abstract
Mlijeko i mliječni proizvodi, prepoznati su još otprilike 4.000 godina prije Krista kao neizostavan dio ljudske prehrane. Mlijeko je bogato pravilnim omjerom hranjivih tvari koji služe za razvoj organizma kako kod ljudi tako i kod mladih sisavaca. Mlijeko i mliječni proizvodi stvarno su neizostavan dio u ljudskoj prehrani zbog velike hranjive vrijednosti, ali isto tako i služe kao sredina za razvoj benefitnih i patogenih mikroorganizama. Iako su svi ti mikrobi neophodni, mnogi smetaju čovjeku, biljkama i životinjama izazivajući razne bolesti i probleme kao i kvarenje hrane. Zbog tih problema, čovjek primjenjuje različite sustave zaštite, liječenje i preventive različitih simptoma, kao i same bolesti. Poznavanjem različitih tipova mikroba i njihovih parametara koji utječu na rast, razvoj i ugibanje lakše ćemo naučiti održati naše svakodnevne namirnice duže svježima i njihovo korištenje. Na isti taj način naučit ćemo se braniti od mikroba koje šire različite bolesti koje smetaju normalnom razvoju čovjeka, a isto tako biljnog i životinjskog svijeta.
Abstract (english)
Milk and dairy products, have been recognized for about 4,000 years before Christ as an essential part of the human diet. Milk is rich in proper ratio of nutrients that are used for development of the organism in people and in young mammals. Milk and dairy products really are an indispensable part of the human diet because of high nutritional value, but also serve as an environment for development benefitnih and pathogenic microorganisms. Although all these microbes are essential, many bother to man, plants and animals, causing various diseases and problems as well as food spoilage. Because of these problems, one applies different protection systems, treatment and prevention of various symptoms and the disease. By knowing the different types of microbes and their parameters that affect the growth, development and guesswork helps us learn to maintain our daily foods fresh longer and use. In the same way that we will learn to defend against microbes that spread various diseases that interfere with the normal development of man, as well as plant and animal life
