Stevia (Stevia rebudiana Bertoni) is a wild plant native to South America. Stevia leaves contain the sweet substances steviosides and steviol glycosides, which are thirty to forty times sweeter than sugar. These sweet substances are responsible for stevia’s worldwide distribution and production. Stevia looks like a nettle. It is a natural sweetener as well as sugar that we normally use in our diet, but it does not contain any calories compared to stevia, so it does not affect blood glucose levels and regulates blood pressure and promotes blood flow. Also, this plant has anti-allergic, antiviral and bactericidal activity. This paper also describes its effect on dental health, digestion, and how stevia successfully heals wounds and relieves scarring. All these effects of this interesting and medicinal plant have influenced on its high demand worldwide. Stevia has been banned in some countries because it has been associated with many of the negative traits that were actually the result of anti-propaganda against stevia being natural sweetener. The countries where it was first approved as a sweetener and medicinal specie are Brazil, China, Japan, and it has been banned in Europe, Singapore, Hong Kong. However, in 2008, it was approved in America as a food additive, and a year later in France. Since 2011 it has been approved in Europe and in 2012 in Croatia. The production of stevia in Croatia is not yet sufficiently developed and stevia is not being grown as agriculture crop. There are only two varieties of stevia that are adapted to our climatic conditions, which also affects its presence as an agricultural crop. The processing and extraction of the active components of stevia itself are expensive and processing industry in Croatia is not developed. Therefore, its production in our country is poorly represented.
