The first law on organic agriculture was passed in 2001 and since then various measures of development of organic agriculture have been applied and it is slowly but steadily increasing. The importance of a healthy diet and preservation of the environment is becoming unquestionable and more and more people are turning to healthier lifestyles and organic farming. In order to protect the environment, protection and fertilization of the plants must be organic, the soil, its fertility and biological activity must be preserved. Chemicals and mineral fertilizers are prohibited in organic farming. Healthy and high quality organic planting material should be used when planting and it is advisable to use native varieties to preserve biodiversity and genetic diversity. Shallot tolerates various growing conditions and requires little water. It is classified in the Allium cepa var family. aggregatum. Although the morphological angst looks very similar to the Allium cepa, there are some differences. The plants are perennial and unlike the Allium cepa they generally have smaller flowers, inflorescence and bulbs. They are propagated mostly vegetatively and like moist soil, good drainage and sunny habitat. Harvesting is done after the leaves dry, from mid-summer and further. The climatic conditions in our country are favorable for the cultivation of the shallot. It is extremely important to preserve varieties that are indigenous so that they can be further grown as they can contribute to the development of organic farming and to the conservation of the environment since the usage of plant protection products is unnecessary or minimal. The aim of this paper was to collect data on shallot that was not given enough attention, and is a culture that can withstand different growing conditions, poor soil and does not need much water and is therefore suitable for organic farming.
