Protein, zinc and bioavailable zinc are key components that contribute to the nutritional profile of wheatgrass juice. Wheatgrass, as a young stage of wheat, is rich in a high concentration of proteins that are important for the growth and renewal of cells and support the immune system. Also, the presence of zinc in wheatgrass juice adds an important mineral that supports a range of biological processes, including immune function, reproduction and antioxidant protection. The bioavailability of zinc, i.e. th e ability of the body to absorb and use this mineral, further strengthens its importance. In particular, among the 50 tested wheat varieties, the variety T. spelta showed the lowest protein concentration, with a value of 15.44 mg mL 1. On the other hand, t he Apollo variety stood out as the variety with the highest protein concentration, amounting to 60.85 mg mL 1. In the context of total zinc, the variety Eurofit showed the lowest concentration, with 1.50 mg mL 1, while the variety T. monoco c cum was singled out as the variety with the highest concentration of total zinc, with 3.79 mg mL 1. When it comes to zinc bioavailability, the variety Soissons had the lowest concentration, with 0.14 mg mL 1, while the variety T. dicoccoides again led with the highest co ncentration of bioavailable zinc, with 1.71 mg mL 1. These results suggest diversity in the nutritional composition of wheatgrass among different cultivars. Taking into account all these factors, it is important to note that the choice of wheat variety can affect the intake of protein and zinc through wheatgrass juice. Further research, with additional variables such as growing and preparation conditions, could further deepen our understanding of the nutritional value of this plant and its role in human die t.
