Abstract
Selen je esencijalni element za čovjeka, životinje i neke alge. Biofortifikacija je proces kojem je cilj povećati koncentraciju hranjivih tvari u jestivim dijelovima biljke. Cilj istraživanja bio je ispitati utjecaj bifortifikacije selenom na pH vrijednost, sadržaj šećera, te ukupne koncentracije selena i cinka u moštu i vinu sorte Regent. Pokus je postavljen prema potpuno slučajnom planu s tri tretmana u četiri ponavljanja. Za pripremu otopina za biofortifikaciju, korišten je Se u obliku natrijevog selenata (Na2SeO4), a kao okvašivač je korišten Tween 20. Za određivanje pH vrijednosti korišten je pH metar Mettler Toledo FiveEasy. Pri određivanju šećera korišten je digitalni refraktometar marke Kern Optics. Određivanje ukupnih koncentracija selena i cinka u moštu i vinu napravljeno je pomoću ICP-OES tehnike. Jednofaktorijalnom analizom varijance utvrđen je statistički značajan utjecaj biofortifikacije selenom na ukupne koncentracije selena u moštu i vinu. Također je utvrđeno da folijarna primjena selena nije imala značajan utjecaj na koncentraciju šećera, pH vrijednost mošta i vina niti na urod po parcelici.
Abstract (english)
Selenium is an essential element for humans, animals and some algae. Biofortification is a process by which nutrient concentration in edible plant parts is enhanced. The aim of this research was to assess the effect of biofortification with selenium on the pH value, sugar content and total selenium and zinc concentrations in most and wine of grape vine variety Regent. The experiment was set up with three treatments in four replicates according to completely randomized design. Biofortification solutions were prepared with sodium selenate (Na2SeO4) as a selenium source, and Tween20 as a surfactant. pH value was determined with Mettler Toledo FiveEasy pH meter and sugar content was measured with Kern Optics digital refractometer. In assessing total selenium and zinc concentrations in most and wine ICP-OES technique was employed. One-factor analysis of variance showed that biofortification significantly increased total selenium concentration in most and wine. On the contrary, foliar application of selenium didn’t have significant effect on zinc concentration, sugar content and pH value of most and wine.
