Abstract
Zbog poznatih promjena na globalnom tržištu goveđeg i svinjskog mesa, primjetna je potražnje za mesom peradi. Posljednjih godina bilježi se povećani interes potrošača za prehrambenim proizvodima posebnog mirisa i okusa te bogatim hranjivim tvarima. Potrošači pokazuju sve veći interes za proizvode od tovnih pilića uzgojenih u poluintenzivnim ili ekstenzivnim uvjetima te su spremni platiti za kvalitetnije proizvode specifičnih senzorskih karakteristika. Proizvodnja i uzgoj kopuna mogu se pronaći na manjim farmama diljem svijeta, ali meso kopuna kao komercijalni proizvod može opstati samo u zemljama koje su ga navele kao tradicijski proizvod. Posebnog je okusa i izuzetne gastronomske kvalitete. Proizvodnja kopuna mogla bi biti alternativni sektor peradarske proizvodnje s posebnim korištenjem autohtonih ili lokalno prilagođenih pasmina.
Abstract (english)
Due to known changes in the global beef and pork market, there is a noticeable demand for poultry meat. In recent years, there has been an increased interest of consumers in food products with a special smell and taste and rich in nutrients. Consumers show an increasing interest in broiler products raised in semi-intensive or extensive conditions and are ready to pay for higher quality products with specific sensory characteristics. Capon production and farming can be found on small farms around the world, but capon meat as a commercial product can only survive in countries that have listed it as a traditional product. It has a special taste and exceptional gastronomic quality. Capon production could be an alternative sector of poultry production with special use of autochthonous or locally adapted breeds.
