Abstract
Cilj ovog istraţivanja bio je ispitati varijabilnost kvalitativnih svojstava kod 24 hrvatske i šest stranih sorata ozime pšenice metodom Megazyme k-amyl 07/11 (Megazyme International Ireland, 2011.), te otkrivanje potencijala istih za posebne namjene. Analiza sastava škroba temeljila se na izdvajanju amiloze i amilopektina te njihove količine i omjera. Analiza količina amiloze i amilopektina utvrdila je statistički visoko opravdane razlike meĎu ispitivanim sortama. Ispitivane sorte većinom su krušne pšenice različite kvalitete, te imaju uobičajen sadrţaj amiloze i amilopektina, no izdvojile su se sorte s visokim sadrţajem amilopektina i niskim sadrţajem amiloze, te sorta s visokim sadrţajem amiloze, koje imaju potencijal u budućim oplemenjivačkim programima i selekciji za posebne namjene.
Abstract (english)
The aim of this study was to investigate the variability of quality characteristics in 24 Croatian and six foreign winter wheat cultivars using Megazyme K-amyl 7.11 method (Megazyme International Ireland, 2011) and detecting potential of these cultivars for special needs. Analysis of the starch was based on the separation of amylose and amylopectin and their quantities and ratios. Analysis of the amount of amylose and amylopectin has found a high statistically significant differences between the cultivars. The tested varieties are mostly bread wheat of different quality which have the usual content of amylose and amylopectin, but there were identified cultivars with high amylopectin and low amylose content and also cultivar with high amylose content which have the potential in future breeding programs and selection for special needs.
