Abstract
Pčelarstvo je grana poljoprivrede, koja se bavi uzgojem pčela radi dobivanja pčelinjih proizvoda. Fizikalna, kemijska i mikrobiološka svojstva tih proizvoda ovise o biološkom i geografskom porijeklu medonosnih biljaka, te sposobnosti pčelara da te proizvode pravilno sakupi i skladišti. Kroz povijest, med je poznat kao ljekovita prehrambena namirnica, a razvojem tehnologije istražuju se pojedine komponente meda i spojevi, koji medu daju ta ljekovita svojstva. Pčele sakupljaju nektar i probavnim enzimima ga pretvaraju u med koji služi za prehranu zajednice. S obzirom na porijeklo nastanka meda postoje cvjetni med, medljikovac i miješani med. U ovom radu, rađene su kemijske i spektrofotometrijske metode na različitim uzorcima meda, radi određivanja antioksidativnog kapaciteta raznih tipova meda od različitih proizvođača metodom DPPH (2,2-difenil-1-pikrilhidrazil) i Folin-Ciocalteu reagensom.
Abstract (english)
Beekeeping is a sector of agriculture, which involves breeding of bees for the purpose of obtaining beeproducts. The physical, chemical and microbiological properties of these products depend on the biological and geographical origin of melliferous plants, as well as the ability of beekeepers to properly collect and store the products. Throughout history, honey is known to be one of the best medicional nutritional foods and as the technology developes, certain components of honey are beeing explored, especially compounds, which have healing properties for humans. Bees harvest nectar and with the help of their digestive enzymes, convert it into honey that serves for feeding the beecolony. Taking into consideration the origin of the honey, there are blossom honey, honeydew honey and mixed honey. In this paper, chemical and spectrophotometric methods were performed on different honey samples to determine the antioxidant capacity of various types of honey from different manufacturers using DPPH (2,2-diphenyl-1-picrylhydrazil) method and Folin-Ciocalteu reagent.
