Abstract
Svrha klasiranja goveđih trupova je njihovo sortiranje prema kriterijima temeljenim na njihovoj kvaliteti. Ovo daje osnovu za transakciju između proizvođača i mesno-prerađivačke industrije, ali i motivira proizvođača da proizvede goveđe trupove kvalitativnih karakteristika koje će biti ocijenjene najvišim klasama. Kako bi ovakav način transakcije bio učinkovit, proizvođači moraju biti uvjereni da je shema klasiranja pravedna, objektivna i konzistentna. Gorući problem u proizvodnji goveđeg mesa, međutim, je to što shema ocjene kvalitete polovica koja se zasniva na vizualnoj procjeni, poput EUROP sustava, ne zadovoljava sve navedene kriterije. Stoga je od presudne važnosti dati kritički osvrt na postojeću shemu klasiranja goveđih trupova u Republici Hrvatskoj, te dati uvid u nova moguća rješenja i njihovu implementaciju na nacionalnoj razini.
Abstract (english)
The aim of carcass grading is their classification according to criteria based on their quality. This makes a foundation for a transaction between producer and meat processor and motivates the producer to produce beef carcasses that will be scored with the highest grades. For this transaction to be efficient, the grading scheme needs to be righteous, objective and consistent. The main problem in the meat industry is that carcass grading scheme which is based on visual assessment, like EUROP system, does not satisfy those criteria. Therefore, it is crucial to give a critical overview of carcass grading scheme used in Croatia today, as well as to give an insight into new possible solutions and their implementation on a national level.
