Abstract
Koza je životinja koja je među prvima udomaćena za proizvodnju mesa, mlijeka, kože, dlake, stoga se koza uzgaja u gotovo svim dijelovima svijeta. Glavni kozji proizvod je mlijeko. Koze daju najveću količinu mlijeka u odnosu prema svojoj težini u usporedbi s drugim domaćim životinjama. Koza tijekom laktacije daje 10- 15, pa čak i do 20 puta više mlijeka od svoje tjelesne težine. Meso je uz mlijeko drugi najvažniji kozji proizvod u Europi a priličnom broju uzgajivača i najvažniji. Kozje meso se može iskorištavati svježe i sušeno, naravno uz ispravan postupak sušenja. Također kozje meso se može prerađivati u kobasice , samo ili uz dodatak drugih vrsta mesa ili slanine. Vrhunac koristi od koze je kozji sir. Proizvodnja sira je najrašireniji način prerade kozjeg mlijeka. Sir je vjerojatno i najstariji mliječni proizvod, koji je čovjek počeo izrađivati.
Abstract (english)
The goat one of the first domesticated animals with purpose of meat, milk, skin and fur production., so the goats are grown in almost all parts of the world. The main product is goat milk. Goats provide the greatest amount of milk in relation to their weight compared to other domestic animals. Goats during lactation gives 10-15 and even up to 20 times more milk than their body weight. Meat with the second most important goat milk product in Europe and a fair number of growers and the most important. Goat meat can be exploited fresh and dried, of course, with the correct setting process. Also goat meat can be processed into sausages, alone or with the addition of other types of meat or bacon. The highlight of the benefits of a goat is a goat cheese. Cheese production is the most common way of processing of goat milk. Cheese is probably the oldest dairy product, which man began to making.
