Abstract
Cilj ovog rada je prikazati tehnologiju proizvodnje pira. Pir se smatra jednom od najstarijih vrsti žitarica. Gotovo se prestala proizvoditi te je održavana samo u bankama gena širom svijeta. Ponovno je otkriven sedamdesetih godina prošlog stoljeća, buđenjem ekološke svijesti stanovništva o neophodnosti korištenja zdravstveno sigurne hrane. Uglavnom se koristi u mlinarskoj industriji, no upotrebu pronalazi i u pivarskoj industriji, za ishranu stoke i u novije vrijeme za liječenje raznih bolesti. Pirovo zrno je jedan od rijetkih biljnih proizvoda koji sadrži sve potrebne esencijalne aminokiseline potrebne čovjeku. Zrno pira je također bogato ugljikohidratima, vlaknima, nezasićenim mastima, mineralima, vitaminima A,C i B kompleksa. Pogodan je za ekološku proizvodnju jer je otporan na bolesti i štetnike, ima skromnije zahtjeve prema klimatskim i zemljišnim uvjetima te agrotehnici. Područje uzgoja poklapa se sa područjem uzgoja pšenice. U Republici Hrvatskoj postoje odlični uvjeti za ekološku proizvodnju pira. Prosječan prinos iznosi oko 3 t/ha, no može i više uz kvalitetnu agrotehniku i plodored.
Abstract (english)
The aim of this paper is to present the technology of spelled production. Spelt is considered to be one of the oldest types of cereals. It has almost stopped being produced and is only maintained in gene banks around the world. It was rediscovered in the 1970s, by awakening the ecological awareness of the population about the necessity of using safe food. It is mainly used in the milling industry, but it is also used in the brewing industry, for feeding livestock and more recently for the treatment of various diseases. Spelled grain is one of the few plant products that contains all the necessary essential amino acids needed by man. Spelt is also rich in carbohydrates, fiber, unsaturated fats, minerals, vitamins A, C and B complex. It is suitable for organic production because it is resistant to diseases and pests, has more modest requirements for climatic and soil conditions and agricultural technology. The area of cultivation coincides with the area of cultivation of wheat. In the Republic of Croatia there are excellent conditions for organic production of spelled. The average yield is about 3 t / ha, but it can be higher with quality agricultural techniques and crop rotation.
