| Abstract | Republika Hrvatska ima bogatu tradiciju uzgoja svinja i proizvodnje različitih vrsta suhomesnatih proizvoda od svinjskoga mesa. Razlog tome je specifičan zemljopisni položaj i blagonaklona klima te bogata kultura i tradicija
proizvodnje ovakvih proizvoda. Šunka je tako među najpoznatijim suhomesnatim proizvodima u RH, a kategoriziramo je kao trajni suhomesnati tradicijski proizvod od svinjskog mesa. Šunka je proizvod od obrađenog svinjskog buta iz kojega se vadi križna kost (os sacrum) i zdjelične kosti (bočna, sjedna i preponska) te se donji rub buta polukružno zaobli, kako bi
bio oko 6 cm od glave bedrene kosti. Nakon obrade u but se utrljava sol ili se koristi vlažna salamura kroz 30 dana, poslije čega slijedi dimljenje (sušenje) i zrenje šunki, u posebnim prostorijama s optimalnom mikroklimom, kroz 7-8 mjeseci, ovisno o masi buta. Da bi se proizvela kvalitetna šunka nužno je osigurati kvalitetnu sirovinu (meso buta). Na kvalitetu svinjskih polovica utječe genotip svinja, hranidba, sustav držanja, dob svinja, spol, kastracija, završna tjelesna masa svinja, postupak sa svinjama prije klanja, tehnologija proizvodnje šunki (primarna obrada butova, soljenje, dimljenje, zrenje). Cilj
ovoga rada je prikazati kako povezano djelovanje ovih čimbenika utječe na kvalitetu šunki. |
| Abstract (english) | The Republic of Croatia has a rich tradition of pig breeding and the production of various types of cured pork products. The reason for this is the specific geographical location and favorable climate, as well as the rich culture and tradition of the production of such products. Ham is thus one of the most famous cured meat products in the Republic of
Croatia, and we categorize it as a permanent cured meat traditional product made from pork. Ham is a product made from a processed pork leg, from which the sacrum (os sacrum) and pelvic bones (side, seat and groin) are removed, and the lower edge of the leg is rounded in a semicircle, so that it is about 6 cm from the head of the femur. After processing, salt is rubbed into the leg or wet brine is used for 30 days, after which the ham is smoked (drying) and matured, in special rooms
with an optimal microclimate, for 7-8 months, depending on the weight of the leg. In order to produce quality ham, it is necessary to provide quality raw material (thigh meat). The quality of pork halves is influenced by the genotype of pigs, feeding, housing system, age of pigs, sex, castration, final body weight of pigs, procedure with pigs before slaughter, ham production technology (primary processing of thighs, salting, smoking, ripening). The aim of this paper is to show how the
combined action of these factors affects the quality of hams. |
