Abstract
Cilj ovog rada je utvrditi optimalan trenutak berbe sorti Cabernet franc, Merlot i Pinot crni kroz detaljnu analizu njihove tehnološke zrelosti tijekom vegetacijskih sezona 2023. i 2024. godinom. Istraživanje je provedeno na odabranom položaju Vinkomir u vinogorju Kutjevo, gdje su uzeti uzorci grožđa u različitim fazama zrenja. Uzorci su analizirani korištenjem standardnih enoloških metoda kako bi se procijenila koncentracija šećera (°Oe), pH vrijednost, ukupna kiselina te masa 100 bobica u... More gramima. Provedbom analize uspoređen je proces sazrijevanja sorti grožđa kako bi se utvrdilo na koji način klimatski uvjeti u različitim godinama utječu na akumulaciju šećera i promjene u sastava kiselina te kada svaka sorta doseže optimalnu zrelost za berbu. Abstract (english)
The aim of this paper is to determine the optimal harvest time for the Cabernet Franc, Merlot and Pinot Noir varieties through a detailed analysis of their technological maturity during the 2023. and 2024. growing seasons. The research was conducted in a selected vineyard location in the Kutjevo wine-growing region, where grape samples were taken at different ripening stages. The samples were analyzed using standard enological methods to assess sugar concentration (°Oe), pH values, total... More acidity and the mass of 100 berries in grams. The analysis compared the ripening process of each variety to determine how specific climatic conditions in different years affect sugar accumulation and changes in acid composition, as well as to identify when each variety reaches optimal maturity for harvest.
